...vegetarian meal?
I seem to have a loss of inspiration in the cooking department lately, and everyone here always seems to have great ideas.
Any suggestions would be greatly appreciated.
Or anything that has meat in it, that can be easily cooked without as well, will do.

yes dairy and eggs. and occasionally fish (when dining out and there are no vege choices). i guess you would call me a very relaxed vegetarian.

Spinach, Pear and Feta Salad

I invented this recipe the year our pear tree had too many pears. I serve it on very special occasions but can be made for everyday meals too.
Servings: 4
Ingredients:
2 pears, cored and thinly sliced
1 cup diet lemon-lime soda
4 cups baby spinach leaves
1 shallot, finely chopped
1/2 cup crumbled feta cheese
1/2 cup toasted pine nuts
1/2 cup raspberry vinaigrette salad dressing
Directions:
1. Place the pears in a bowl with the lemon-lime soda. Set aside; this will keep them from turning brown.
2. Place the baby spinach in a serving bowl, and add the shallot, feta cheese and pine nuts. Drain the pears, and discard the soda. Add pears to the salad, and toss to blend. Serve with raspberry vinaigrette dressing.
NOTE:
To toast pine nuts, place them in a dry skillet over medium heat. Cook, stirring occasionally until browned and fragrant, about 5 to 8 minutes.
