what's your favourite...(?)

...vegetarian meal?

I seem to have a loss of inspiration in the cooking department lately, and everyone here always seems to have great ideas.

Any suggestions would be greatly appreciated. Big Grin
Or anything that has meat in it, that can be easily cooked without as well, will do.

    Grilled cheese sandwich...cant remember if you are doing dairy though. Ice cream. Thats my dinner. Sherbert ice cream. yummy.

    lol.
    yes dairy and eggs. and occasionally fish (when dining out and there are no vege choices). i guess you would call me a very relaxed vegetarian.

    I've been looking for these too! Check www.allrecipes.com. I found some great salads there, tofu dishes, spinach & feta side dishes, etc. I'm the same as you.. the only "meat" I'll eat is sashimi-grade fish. (I have successfully alienated both real vegetarians and meat eaters).

    When I have some time, and help, our favorite recipe is Brooklyn Pad Thai from "Vegan With a Vengeance." Otherwise, my personal favorite is Pasta Della California from "Veganomicon," except I bake Morningstar brand vegetarian buffalo wings, dice them and sprinkle on top right at the end.

    I bet you could find both recipes online, but buy the books if you're a dedicated cook. The author is amazing: Isa Chandra Moskowitz.

    Enchiladas... Refried beans, cheese, onion, olives, tomato in a tortilla shell, covered in red sauce w/ a little cheese sprinkled on top.
    Sour cream and diced tomato on serving. Absolute heaven.

    Spinach, Pear and Feta Salad
    Submitted by: JUDEEZJEWLS
    I invented this recipe the year our pear tree had too many pears. I serve it on very special occasions but can be made for everyday meals too.
    Servings: 4

    Ingredients:
    2 pears, cored and thinly sliced
    1 cup diet lemon-lime soda
    4 cups baby spinach leaves
    1 shallot, finely chopped
    1/2 cup crumbled feta cheese
    1/2 cup toasted pine nuts
    1/2 cup raspberry vinaigrette salad dressing

    Directions:
    1. Place the pears in a bowl with the lemon-lime soda. Set aside; this will keep them from turning brown.
    2. Place the baby spinach in a serving bowl, and add the shallot, feta cheese and pine nuts. Drain the pears, and discard the soda. Add pears to the salad, and toss to blend. Serve with raspberry vinaigrette dressing.

    NOTE:
    To toast pine nuts, place them in a dry skillet over medium heat. Cook, stirring occasionally until browned and fragrant, about 5 to 8 minutes.
